Crossing the hall of the Park Hyatt Paris Vendôme, it is not uncommon to see a tall figure dressed in white between the colonnades watching the ballet of the customers. He’s the chef. Smiling, never stingy with a kind word, he soaks up the atmosphere of the moment.

Nature, the seasons, and its encounters inspire its culinary universe. His culture of the classic French repertoire allows him to always have audacity and creativity in perpetual boiling. His curiosity and his appetite for travel make the difference. His creations are never exotic, however. They are distinguished by delicate flavors, a subtle balance, sometimes intriguing, which moves the taste buds. We wonder ... At noon, Le Sens offers chic bistro cuisine based on tastes and images of childhood.

In the evening, in the intimacy of the restaurant Le Pur’, the chef offers a gastronomic meeting where his virtuosity and the richness of his life journey are expressed. A hushed show takes place between the open kitchen and the rotunda room, punctuated by the score composed for each plate. Everything is in harmony at Jean-François Rouquette.
