A new book from Alexandre Couillon, the 2-Michelin Starred Chef at La Marine on Noirmoutier island in France. He was recently awarded Chef of the Year by 2017 Gault & Millau. In this new book (published in November 2016), we feel Alexander Couillon's passion for his trade and for his land. We discover a profoundly humble man who has succeeded over the years to purify his kitchen around the products of his garden and the sea that surrounds him. He therefore feels a deep respect for the elements of his kitchen as well as for all of his collaborators including the closest, his wife Céline.

The universe of Alexandre Couillon is both generous and radical, just like him. The recipes that it gives are those of "La Marine": the famous oyster Erika, pea ice cream, white asparagus grilled with pine cones grass vegetables and honey vinaigrette, zucchini line and Goat's milk, the fisherman's kettle or the emblematic dessert of the house ballad in the wood of Chaize. This book is therefore above all an artistic project around the chef, his cuisine and his environment, and it is essential to see it as such.
