The sense of smell, so highly considered in tasting wine, is used very little when eating. The aroma spoon (spoon with clip) is used in Ferran Adrià's elBulli restaurant to provoke this sense, since it permits the guest to smell one thing and eat another, in an act that awakens a sensorial mixture.
