Crossing the hall of the Park Hyatt Paris Vendôme, it is not uncommon to see a tall figure dressed in white between the colonnades watching the ballet of the customers. He’s the chef. Smiling, never stingy with a kind word, he soaks up the atmosphere of the moment.
