Unlike the common cassia, our true Ceylon Cinnamon has a subtle but intricate flavor with a soft texture. After collecting only the most delicate strips of the inner bark of the young cinnamon tree shoots, we sun dry and firmly hand roll them to create our richly fragrant, golden brown Cinnamon "quills", with edges neatly joined end to end to achieve a uniform thickness and length. Length: 5 inches.
