The oval, brownish-green seed has strong heavy, spicy-sweet aroma with acrid but warm depth. The flavor is rich, slightly bitter, sharp, earthy and warm, with a persistent pungency. Cumin stems are cut when the plants begin to wither and the seeds turn brown. They are threshed and the seeds dried in the sun. Use sparingly. Net weight: 1 lb.
