Guar Gum

An economical thickener and stabilizer. Rapidly hydrates in cold water giving high low-shear viscosity but is strongly shear-thinning. Stable at pH range 5-7. It is a better emulsifier than locust bean gum. This gum shows viscosity synergy with xanthan gum. Net weight: 24 oz.
