Za'atar
Za’atar is a blend of sun-dried herbs used throughout the Middle East for centuries. Each househeld had its special variation (mothers might withhold their secret mixtures from even their own daughters), used to flavor meats and vegetables or as a dip with olive oil or to spread on pita. Sprinkle it on hummus, yogurt or even popcorn. Our fragrant salt-free blend is heavy on thyme, oregano and sesame seeds, with sumac for a tart lift.
Herbes de Provence
The most popular herb blend from the south of France, Herbes de Provence combine sweet with robust, floral with vibrant. The aromatic herbs thrive in this Mediterranean region’s summer climate. Traditionally gathered from the mountainsides, they are dried, blended and used famously for dishes such as roast chicken, grilled meats and stewed vegetables such as ratatouille. Simmer the herbs in grapeseed oil with a little shallot, garlic and black pepper for an infused oil vibrant with the herbs’ fragrance.
Quatre Épices
The robust, fragrant spice blend known as quatre épices, or “four spices,”dates back to the European courts of the middle ages and is a favorite staple in French and Middle Eastern kitchens. A mixture of pepper, ginger, cloves and nutmeg, it adds rich flavor to soups and stews, vegetables, cakes, and pâtés and other charcuterie. Our Quatre Épices is distinct, made with our aromatic, mildly piquant white peppercorns.
